French Toast Muffins

I have stated before that I supply breakfast/snacks for my church every Sunday. A few weeks ago I tried French Toast Muffins. I made three different kinds. They were a hit.

I went the lazy route and used coffee creamers for the flavorings in 2 of the muffins. But really these are so easy and versatile, you could make them anyway you like.

French toast Muffins


1 loaf French or any crusty bread (cut into cubes)

6 eggs

1/2 cup (or 1 cup if not using another liquid) half and half or heavy whipping cream

1/2 cup other liquid

1 tsp. Vanilla

Any spices you like.

  1. Preheat oven to 350 degrees. Spray your muffin pan with non-stick spray.

  2. In a large bowl add your cube bread. In a separate bowl, crack 6 eggs, scramble, add liquid, vanilla and spices, combine well.

  3. Pour liquid mixture over bread. Toss to evenly coat. Stuff muffin cups with saturated bread cubes. Lightly press down to fill the cups.

  4. Bake for about 15-20 mins. or until cooked through and golden brown.

Here are the variations that I used for my muffins:


Follow instructions above, add 1 cup of eggnog instead of any other liquid, to egg mixture. Add vanilla, 1 tsp. nutmeg and 1 tsp. cinnamon. Combine well. Continue with above instructions.

I also crumbled brown sugar on top of these muffins before baking to give them a little crunch.


Followed basic muffin instructions. Added 1 cup of peppermint mocha coffee creamer instead of any other liquid to egg mixture. Add vanilla, and 1 tsp. cinnamon. Combine well. Continue with basic muffin instruction. I added a little bit of melted chocolate to the cooled muffins.


Follow basic muffin instruction. Add 1 cup apple sauce to egg mixture. No other liquid needed. Add vanilla and tsp. apple pie spice. Combine well. Continue with basic muffin instruction.

These muffins are so easy to personalize. Have fun with them.
